Apple and Brie Grilled Cheese

How to Make the Best Apple and Brie Grilled Cheese

This apple and brie grilled cheese takes the classic comfort sandwich to gourmet heights without requiring any fancy cooking skills. The combination of creamy melted brie, crisp apple slices, and aromatic sage transforms simple ingredients into something truly special. It’s the perfect lunch that feels fancy enough for entertaining but is just as simple to make as a traditional grilled cheese.

Why This Combination Works

Brie’s buttery, mild flavor is the ideal canvas for bright fruit and herbs. The thinly sliced sage adds an earthy, slightly peppery note that complements both the brie and the natural sweetness of the apple. When everything melts together on toasted multigrain bread, you get a perfectly balanced sandwich with contrasting textures—crispy bread, creamy cheese, and tender-crisp apple slices.

Making It Your Own

Feel free to experiment with different apple varieties—Honeycrisp, Granny Smith, or Pink Lady all work wonderfully. For an extra touch of sophistication, add a thin layer of apple butter or fig jam, or swap the sage for fresh basil. This sandwich pairs beautifully with a simple green salad or a bowl of tomato soup.

Instructions

Prep

  1. Cut the brie into four equal pieces. Slice a Macintosh apple horizontally, removing the core and seeds on the middle slices. Stack the sage leaves on top of each other, roll and slice into thin strips.

Make and Cook

  1. Heat a cast iron or non-stick skillet over medium low heat. Spread butter on one side of each piece of bread. Place one slice of bread butter side down in the pan.
  2. Break one slice of the brie into pieces over the bread, leaving the rind on is optional. Stack the brie with three slices of apple, and a sprinkle of the chopped sage, about 1 teaspoon. Add another slice of brie broken into pieces over the apples and top with a slice of buttered bread, butter side up.
  3. Cook the sandwich for 2 to 3 minutes on each side until the bread is golden brown and the cheese is melty. Using a wide spatula, flip over the sandwich and cook for another 2 to 3 minutes.
  4. Repeat with the remaining ingredients, slice and serve!

Notes

  • Leaving the rind on the brie is optional—remove it if you prefer a smoother melted texture.
  • Room temperature brie spreads more easily and creates a creamier filling.
  • A crisp apple variety like Macintosh provides the perfect balance of sweetness and acidity.
