How to Make the Best Caprese Carbonara

A Modern Twist on Classic Carbonara

Caprese carbonara takes everything you love about traditional carbonara and adds fresh summer flavors with juicy roasted tomatoes, creamy mozzarella, and aromatic basil. This Italian-inspired pasta dish is hearty enough for dinner yet feels light and fresh with its combination of ingredients.

Why This Recipe Works

The beauty of caprese carbonara lies in its balance of textures and flavors. The creamy egg-based sauce coats every strand of bucatini pasta, while the crispy bacon adds smokiness, the roasted tomatoes bring sweetness and acidity, and the fresh mozzarella melts slightly into the warm pasta. The generous amount of fresh basil ties everything together with an herbal, garden-fresh finish that makes this dish feel special enough for entertaining.

Tips for Success

The key to perfect carbonara is working quickly—toss the hot pasta into the egg mixture immediately after draining to ensure the heat cooks the eggs to a creamy consistency without scrambling them. Use freshly grated Parmesan and high-quality mozzarella for the best results. Don’t skip the reserved bacon drippings; they add incredible depth of flavor to the sauce.

Instructions

Prepare the Tomatoes

  1. Heat oven to 400 degrees.
  2. Toss cherry tomatoes in a baking pan with olive oil, salt and pepper.
  3. Roast for about 10-15 minutes.
  4. Remove from oven and cover with foil to keep warm.

Cook the Bacon

  1. Starting in a cold skillet, cook the bacon over medium heat until crispy.
  2. Some pieces will finish cooking before others, so move the cooked pieces to a paper towel-lined plate when they're done.

Finish the Pasta

  1. Begin boiling the pasta.
  2. As the pasta boils, whisk eggs in a bowl. Stir in grated Parmesan, nutmeg, pepper and reserved bacon drippings.
  3. Drain pasta and immediately toss hot pasta into the egg mixture.
  4. Continue to stir the hot pasta to melt the Parmesan and cook the eggs.
  5. Divide pasta among serving bowls and top with bacon, roasted tomatoes, torn mozzarella and fresh basil.

Notes

  • Reserve the bacon drippings for the egg mixture—they add incredible flavor.
  • Work quickly when combining the hot pasta with the egg mixture to ensure the eggs cook properly without scrambling.
  • Freshly grated Parmesan is essential for the best texture and flavor.
