  1. Preheat oven to 350°F. Line two sheet pans with parchment paper.

  4. Add the egg and vanilla extract. Scrape down the sides and bottom of the bowl and beat until combined.
  5. Reduce to low speed and mix in the dry ingredients. Pour in the sprinkles and mix until just combined.

Baking

  1. Using a medium cookie scoop (1.75 inch) or 1½ tablespoons of dough, scoop and roll the dough into balls.
  2. Place on the parchment-lined cookie sheets with generous space between cookies.
  3. Bake for 12 minutes. Let cool for 5-8 minutes on the cookie sheet before transferring to a wire rack to finish cooling.

Frosting
