Ginger Simple Syrup

  1. In a small saucepan, add the water, sugar and ginger. Bring to a boil over medium-high heat, stirring occasionally to dissolve the sugar.
  2. Once it boils and the sugar dissolves, turn off the heat and allow to steep for at least 15 minutes.
  3. Pour the entire contents of the saucepan into a blender. Blend until smooth. (If you prefer a lighter ginger flavor, you can skip the blending and just steep and strain, but a stronger, spicier ginger flavor in the syrup helps it stand out more in cocktails when you add other ingredients.)
  4. In the sink, place a bowl under a fine-mesh sieve. Pour the contents of the blender into the sieve and allow the liquid to strain from the solids. The liquid is your ginger simple syrup. Allow to cool and then store in an airtight container in the refrigerator. Shake before using.
