How to Make the Best Gingerbread French Toast Casserole
Gingerbread French Toast Casserole is the ultimate holiday breakfast that combines all the warmth and spice of the season with the comfort of classic French toast. This make-ahead casserole is perfect for entertaining family or hosting festive gatherings, as it serves a crowd and requires minimal effort on the morning you’re serving it.
What makes this recipe special is the perfect balance of warm spices—cinnamon, ginger, and nutmeg—combined with rich molasses and the indulgence of a creamy egg custard. The bread soaks up all these gorgeous flavors overnight, and the crispy crumble topping adds wonderful texture, while the sweet glaze drizzle brings everything together with a finishing touch of elegance.
This is the kind of dish that looks fancy and impressive but is surprisingly simple to make, making it an ideal choice for holiday brunches or special breakfast occasions when you want to impress your guests without spending hours in the kitchen.

Instructions
Prepare Casserole
- Preheat the oven to 350°F. Spray a 9x13 pan with cooking spray or grease with butter.
- Cut the challah bread into bite-sized pieces using a bread knife or by hand tearing.
- In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, granulated sugar, molasses, vanilla extract, cinnamon, ginger, and nutmeg.
- Add the pieces of bread to the french toast batter mixture in the large bowl and gently toss until all the pieces of bread are coated. Transfer to the prepared baking dish.
Make Crumble Topping
- In a food processor, pulse the flour, sugar, and butter together. Alternatively, you can use a pastry cutter or your fingers to break the butter into pea size pieces and mix with the flour and sugar.
- Sprinkle the crumble topping over the top of the prepared casserole.
Bake and Glaze
- Bake at 350°F for 45 to 50 minutes. The center will be just a touch jiggly and the edges should be golden brown.
- While the french toast casserole bakes, prepare the glaze by mixing together confectioners sugar and heavy cream.
- Using a spoon, drizzle the glaze over the french toast casserole. Serve warm.
