Blending

  2. Blend on high for 30 seconds.
  3. Add the oats, flour, baking soda, and spices to the wet ingredients in the blender. Blend on high for 30 to 45 seconds until all the ingredients are finely mixed.

Baking

  1. Transfer the batter to a mixing bowl, using a rubber spatula, mix in the diced apples.
  2. Scoop the batter into the muffin liners about ¾ of the way full.
  3. Bake for 20 to 23 minutes or until a toothpick inserted in the center of one muffin comes out clean.
