Instructions

Baileys Mousse

  1. Chop the chocolate and combine with salted butter in a heatproof bowl. Melt over a double boiler or in the microwave, stirring until smooth. Stir in espresso powder and let cool slightly.
  2. Separate the eggs. Beat the egg yolks with 2 tablespoons of sugar until pale and fluffy. Fold the cooled chocolate mixture into the yolks.
  3. In a separate bowl, whip the heavy cream to stiff peaks. Fold the whipped cream into the chocolate mixture along with the Baileys and vanilla extract.
  4. In another bowl, beat the egg whites with remaining 2 tablespoons sugar until stiff peaks form. Gently fold into the mousse. Refrigerate until needed.

Chocolate Ganache Frosting

  1. Chop the chocolate and place in a heatproof bowl. Heat the heavy cream until it just begins to simmer.
  2. Pour the hot cream over the chocolate and let sit for 1-2 minutes. Stir until smooth and glossy. Allow to cool slightly before spreading.

Irish Whiskey Chocolate Cake

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a large bowl, whisk together flour, white sugar, cocoa powder, brown sugar, espresso powder, salt, baking soda, and baking powder.
  3. In another bowl, whisk together eggs, buttermilk, vegetable oil, and vanilla extract until combined. Gradually stir the wet ingredients into the dry ingredients until just combined.
  4. Gently fold in the Irish whiskey until the batter is smooth and fully incorporated.
  5. Divide the batter evenly between the prepared pans. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Assembly

  1. Place one cake layer on a serving plate. Spread a thick layer of Baileys mousse on top.
  2. Top with the second cake layer and spread the chocolate ganache frosting over the top and sides of the cake.
  3. Refrigerate for at least 2 hours before serving to allow the mousse and frosting to set properly.
