Raspberry Cheesecake French Toast Bake

How to Make the Best Raspberry Cheesecake French Toast Bake

This Raspberry Cheesecake French Toast Bake combines two beloved breakfast classics into one indulgent dish that’s perfect for feeding a crowd. The creamy cheesecake swirl and tart raspberry preserves create a beautiful contrast with the custardy french toast, while the crumble topping adds the perfect touch of texture. It truly tastes like an Entenmann’s raspberry danish crossed with french toast!

What makes this dish so special is how easily it comes together. You simply layer soaked bread with a cheesecake mixture and raspberry preserves, then top it all with a buttery crumble. As it bakes, the custard sets, the cheesecake melts into the bread, and the preserves create pockets of sweet-tart flavor throughout. It’s the kind of recipe that looks fancy but is surprisingly simple to execute.

This is an ideal recipe for brunch gatherings or special family breakfasts. You can even prepare it the night before and refrigerate it overnight, then bake it fresh in the morning. Serve it warm with a dusting of powdered sugar or a dollop of whipped cream for an extra special touch that everyone will absolutely rave about.

Instructions

Preparation

  1. Preheat the oven to 350°F. Spray a 9x13 pan with cooking spray or grease with butter.
  2. Cut the challah bread into bite-sized pieces using a bread knife or by hand tearing.

French Toast Mixture

  1. In a large bowl, whisk together the 6 eggs, 2 cups whole milk, ½ cup heavy cream, ¼ cup brown sugar, ½ cup granulated sugar, 2 teaspoons ground cinnamon, and 2 teaspoons vanilla extract.
  2. Add the pieces of bread to the french toast batter mixture in the large bowl and gently toss until all the pieces of bread are coated.
  3. Transfer to the prepared baking dish.

Cheesecake Swirl

  1. Beat the room temperature cream cheese with 1 large egg, ¼ cup granulated sugar, and ½ teaspoon vanilla extract until smooth. You can use a hand blender, standing mixer, or whisk and spatula.
  2. Drizzle the cheesecake mixture over the top of the bread.
  3. Dot with spoonfuls of raspberry preserves.
  4. Using a butter knife, run the knife back and forth through the dish to swirl into the bread.

Crumble Topping

  1. In a food processor, pulse the flour, sugar, and butter together. Alternatively, you can use a pastry cutter or your fingers to break the butter into pea size pieces and mix with the flour and sugar.

Baking

  1. Bake in 350°F oven for 50-55 minutes. The center will be just a touch jiggly and the edges should be golden brown.
  2. Serve warm.

Notes

  • This recipe is best made with a rich, buttery bread like challah, sourdough, or brioche.
  • The french toast bake can be prepared the night before and refrigerated, then baked the next morning.
  • For a stronger raspberry flavor, use more preserves in the swirl.
