Roasted Strawberry Aperol Spritz

How to Make the Best Roasted Strawberry Aperol Spritz

This roasted strawberry Aperol spritz is a stunning twist on the classic Italian aperitif. By roasting fresh strawberries, you intensify their natural sweetness and create a velvety puree that adds depth and character to the traditional combination of Aperol and prosecco.

The magic happens during the roasting process—the gentle heat caramelizes the strawberries’ sugars, creating complex flavors that go far beyond fresh fruit. The resulting puree is then combined with chilled Aperol and prosecco for a sophisticated yet approachable cocktail that’s perfect for brunch, afternoon entertaining, or any celebration.

With its beautiful pink hue, smooth strawberry flavor, and effervescent prosecco, this drink is as elegant to look at as it is refreshing to sip. Whether you strain the puree for a cleaner presentation or keep it unstrained for more texture and flavor, you’ll have a cocktail that feels both special and easy to make at home.

Ingredients

Roasted Strawberries

Aperol Spritz

Instructions

Roasted Strawberries

  1. Heat oven to 350 degrees. On a parchment paper-lined baking sheet, toss strawberries with vanilla and sugar. Roast for about 25-30 minutes.
  2. Let cool and then puree in a blender or food processor with a splash of water until smooth. If you don't like too much pulp or excessive seeds, pour the puree into a fine-mesh sieve with a bowl underneath. Using a spoon, press the puree into the fine-mesh sieve to help separate the seeds and drain the strawberries into the bowl. If you don't mind pulp or seeds, you can skip this step and use the puree as is. Cover and refrigerate.

Aperol Spritz

  1. In a pitcher, stir together the chilled roasted strawberry puree and Aperol.
  2. Once mixed, slowly pour in prosecco and stir to mix.
  3. Top with strawberry-flavored sparkling water. Serve in white wine glasses with or without ice. Alternatively, you can serve in Champagne flutes if you'd like the puree as a floater rather than more evenly distributed throughout the glass. Enjoy!

Notes

  • The photos use unstrained strawberry puree.
  • For a less pulpy drink, strain the strawberry puree through a fine-mesh sieve to separate seeds.
