Simple Syrup
- Combine sugar, 1½ cups water and mint sprigs in a saucepan.
- Heat over medium-high heat until the mixture is near boiling. Periodically stir to dissolve the sugar.
- Once the sugar dissolves, remove from heat and allow the mint to steep for at least 10 minutes.
- Cool the simple syrup and strain the mint leaves.
Strawberry Lemonade
- In a blender, purée the strawberries with ½ cup of water.
- Pour the lemon juice, strawberry purée and simple syrup into a pitcher.
- Stir in 3½ cups of water and taste. If it needs further dilution for your taste, add water a little at a time until it suits your preference.
