Truffle Egg Salad

How to Make the Best Truffle Egg Salad

This truffle egg salad is a gourmet twist on a classic salad that brings luxury to an everyday favorite. The magic lies in the homemade truffle mayo—a creamy, fragrant emulsion that elevates simple hard-boiled eggs into something truly special. With hints of fresh tarragon and dill, plus the earthy richness of white truffle oil, this egg salad is restaurant-quality.

The beauty of this recipe is its versatility. You can serve it on soft sandwich bread with crisp lettuce, cheese, and a ripe tomato slice for an elegant lunch, or enjoy it by the spoonful as a decadent appetizer. The combination of fresh herbs, quality ingredients, and careful technique makes this a showstopper dish that’s perfect for entertaining or treating yourself to something special.

Making the truffle mayo requires a bit of patience—slowly emulsifying the oil into the egg yolk prevents the mixture from breaking—but the result is worth every careful whisk. This is one salad that proves that simple ingredients, when combined with care and quality products, can create something truly memorable.

Instructions

Prepare the Truffle Mayo

  1. In a large mixing bowl, whisk together the egg yolk, Dijon mustard, lemon juice, white wine vinegar and salt until frothy.
  2. Drizzle in a few drops of white truffle oil and whisk until combined. Add a few more drops of white truffle oil and whisk. Do not pour in too much truffle oil at once in the beginning, or the yolk mixture could break. After you use about half of the oil, you can start adding a little more at a time.

Finish the Salad

  1. Stir in chopped boiled eggs, garlic, tarragon and dill. Taste. If desired, add salt to taste. You can also mix in even more truffle oil if you want a more prominent flavor.
  2. Cover and store in the refrigerator until chilled. Enjoy!

Notes

  • White truffle oil is essential for authentic flavor—use a good quality brand
  • You can serve on soft sandwich bread with crisp lettuce, cheese and a ripe tomato slice, or eat it by the spoonful
  • Make sure eggs are hard-boiled and completely cooled before chopping
